I've been racking my brain, trying to think of the perfect breakfast to post as part of my first ever #FoodYearLinkUp ... I decided to write about my family's favourites
First off, it's not breakfast during the week if we don't have egg muffins! They're great because you can literally add whatever you want & with a family of 4 with different preferences, this is my #1 go to
Secondly, we have Chicken Quesadillas. I got this recipe from Ree Drummond and she's just amazing. She's one of those ladies I want to be when I grow up, she makes me want to live on a ranch :)
Then, we have fluffy pancakes. Pancakes are great for those late Saturday mornings, when everyone is being lazy but they still need to get up & do chores haha. We usually have our pancakes with fresh fruits, bacon & drizzled maple syrup. Absolute yum!

Let's not forget the Cinnamon rolls!! They're so delicious and definitely not to be made if you're on a diet haha. Check out the recipe I used, if you're interested. These cinnamon rolls were so good on they're own, i decided to serve them as they are
Recently, my sister & I have been having smoothies for breakfast (still trying to recover from all the Christmas & new year food). These smoothies are great because you get lots of nutrients in one go and all you have to do is drink. I'm sold! Here's my recipe for today's breakfast smoothie
Breakfast Smoothie-
- 1 small banana (or half of a large banana)
- A scant handful of kale leaves*
- 2 Tbsp of smooth peanut butter
- 1 1/2 cups of coconut water
- 1/8 tsp of ground flax seeds
- Mixed blackforest frozen fruits
Mix all these together in your smoothie maker or blender. And enjoy your on the go breakfast smoothie
* I used a little amount of kale because I'm not a massive fan of greens. But I know they're good for me, so I add a little bit. You can add as much as you like to yours
